Born in Hobart Town, the daughter of David Collins, the Lieutenant Governor of Van Diemen's Land, and Margaret Eddington. In 1829, she married becoming the second wife of the prominent Van Diemen's Land pastoralist James Cox. Eliza Cox, was an artist painting floral studies and landscapes.

Since 1970 we have recorded only one work being sold at auction by this artist, which was in 1997.
